Hi Reader, If you're anything like me, January is a time of wanting to settle in and take it slow. Yes, the days are getting longer, but winter has really only just begun, and I look forward to the slower pace after a busy December. One of the things I love this time of year is easy, cozy, warming meals that require minimal effort for maximum enjoyment. Below, I'm including 5 one-pan/pot recipes that will fill hungry bellies without requiring a ton of effort. I hope you have a restorative January filled with comfort. 1. Sun Dried Tomato Chicken GnocchiThis one-pot dinner truly packs a flavor punch with simple ingredients, and the whole thing comes together in about 30 minutes! 2. Sausage and Potato SoupI love to serve this humble but hearty soup with warm crusty bread. 3. Lemon and Ricotta PastaThis is a great option when you want something comforting but a bit lighter. The lemon and ricotta sauce is bright and creamy, while the sweet peas add freshness. 4. Creamy Chicken and RiceThis is one of my most popular recipes and for good reason. It's always a hit and can easily be scaled to your needs. You can't go wrong with this one! 5. Baked Italian Sausage with Peppers and OnionThe sauce is definitely the star of this recipe. It's a savory tomato-based sauce amped up with spices and herbs that take the sausages and veggies to the next level. I like to serve this on hoagie rolls with provolone melted on top. YUM! These Chocolate Chunk Pecan Cookies have everything going for them - chewy in the middle, crisp on the edges, loaded with gooey chunks of chocolate and toasty pecans. I’ve been making them nonstop lately, and honestly? I don’t see that changing anytime soon. They’re super easy to make, and the dough freezes really well, so you can always have some on hand for when the cookie craving hits (which,...
